Quick and Easy Chickpea Salad

Serves 1-2

INGREDIENTS 
​
  • 1 can chickpeas, rinsed and drained 
  • 1 large stalk of celery, chopped into small pieces 
  •  Handful of cilantro, chopped
  • 1/4 of a lemon's juice
  • 2 Tbsp vegan mayo
  • 1 tsp dijon mustard
  • 1 tsp yellow mustard 
  • 1/2 tsp sea salt 

INSTRUCTIONS

1. Combine everything in a medium sized mixing bowl.
2. Mix well until everything is well coated. 
3. You can eat right away. I like mine to be more cold so I place it in the fridge for a few hours or overnight.

**Perfect for taking to work or school, no cooking or microwave required!!!

This food will make the whole family happy and they will find this food satisfying and they will not ask for more food. I want to make a good statement about this post and hope that people will love the taste of this food. A food for the public to try and share in their home. There are more foods out there and we will be more proud of the foods that we have tried if we keep on exploring the world. A world that is full of wonders.
