Broccoli Quinoa Casserole

INGREDIENTS
​
  • 1/2 cup uncooked quinoa 
  • 1 cup vegetable broth
  • 1/2 onion, chopped
  • 2 cloves garlic, minced 
  • 2 small heads broccoli, cut into florets 
  • 1/2 cup cilantro, chopped  
  •  3 large kale leaves, de-stemmed and chopped into small pieces (I used dinosaur kale)
  • 2 Tbsp vegan mayo (I use Fabanaise )
  • 1/2 cup Daiya cutting board shreds for filling 
  • 1/2 cup Daiya cutting board shreds for the top

CHEEZY SAUCE
  • 1 cup raw cashews
  • 1/2 cup water
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp sea salt
  • 3 Tbsp nutritional yeast
  • 1/2 - 1 lemon, juiced

INSTRUCTIONS

** Preheat oven to 375 degrees 
1. Cook quinoa and vegetable broth according to package directions. Set aside.
2. Sauté onions and garlic with 1 Tbsp oil. Set aside.
3. Steam kale and broccoli using a steam basket or pot. Set aside.
4. Combine cooked quinoa, onions, garlic, and steamed broccoli and kale into a large mixing bowl. 
5. Make the cheezy sauce by combining all the "cheezy sauce" ingredients into a high speed blender and blend on high until smooth.
6. Add the cheezy sauce,  1/2 cup daiya cheddar shreds, vegan mayo, and cilantro to the quinoa mixture. 
7. Mix well until everything is combined and coated with the sauce.
8. Transfer mixture to an 8x8 baking pan.
9. Top with the mixture with the remaining 1/2 cup of Daiya cheddar shreds. 
**Optional : Add crumbled pistachios on top like I did. :)
10. Bake in oven for 20-25 minutes until everything is heated through and daiya cheese has started melting on top.

** Serves 3-4
** If making this for a party or a larger family, I recommend doubling the recipe. ​

Broccoli Quinoa Casserole will be a great addition to my collection of meals. This will be the next meal that I want to cook and prepare for my family. A surprise that will make our stay more worthwhile and memorable. Thank you for the kind heart to share the recipe and the steps that are needed to do in order to prepare this meal. I am really thankful. I will wait for the future, posts that will be posted in this blog. I know that there are more recipes out there.

This recipe is absolutely delicious. Being diabetic and following an eating plan, I am always on the lookout for healthy alternatives that taste good. This fits the bill.
